How We Process 12 Tons of Fresh Fruits Monthly
Harvest at 6 AM, wash three times, sun-dry 5-7 days, vacuum seal
Selective Harvesting
We harvest fruits at exact ripeness between March and September. Our workers check each tree daily. Cashew apples picked early morning at 6 AM when temperature is 22-25°C. Only fruits meeting size and color standards are selected. Damaged or unripe fruits composted for organic fertilizer.
Triple Washing System
Fruits washed three times using filtered borewell water from 180 feet depth. First wash removes dirt and debris. Second wash with natural soap nut solution. Final rinse with clean water. All water recycled for irrigation. Sorting done by experienced women workers who remove 8-10% of fruits not meeting quality standards.
Traditional Sun-Drying
Fruits spread on 200 square meter concrete platforms built in 1995. Each batch dried 5-7 days depending on weather. We monitor temperature and humidity hourly. Fruits turned three times daily by hand. Covered during rain or excessive humidity. This method preserves maximum nutrition compared to machine drying.
Quality Check and Packaging
Every batch tested for moisture content using calibrated equipment. Target moisture 12-15% for optimal shelf life. Fruits stored in food-grade containers in temperature-controlled room at 18°C. Packaging done in sealed pouches with nitrogen flushing. Each package labeled with harvest date and batch number for traceability.

Moisture Target
We test moisture for each batch using calibrated meters. Batches outside 12–15% are re-dried or rejected to ensure shelf stability.
Washing Cycles
Triple washing with filtered borewell water and natural soap nut solution. Final rinse is tested for TDS before use.
Storage Room
Packed fruits are stored at 18°C in food-grade containers with humidity control. First-expiry-first-out is strictly followed.
Safety Testing
Random samples are tested monthly at a Nashik lab for aflatoxins and microbial counts. Reports are shared on request for partners.
