Store Cashews at 18°C, Check Moisture Every 3 Months

Keep freshness longer at home or in store

🌡️ Storage range: 18–22°C
💧 Humidity: low; add silica gel in monsoon
🗓️ Open packs: consume within 20–30 days

Best Practices for Maximum Freshness

  • Keep storage room between 18–22°C; avoid windowsills and kitchen counters with direct sun exposure

  • In monsoon months (June–August), drop 1–2 silica gel packs per kg into storage containers to absorb moisture spikes

  • Write opening date on pouches with marker; use older stock first to prevent staleness

  • Store cashews and almonds separately from raisins — nuts release oils that can transfer aroma

Common Mistakes That Reduce Shelf Life

  • Leaving pouches open overnight allows humidity to enter — moisture rises by 2–3% in just 8 hours during monsoon

  • Storing near stove, fridge heat vents, or spice shelves transfers odours and softens nuts

  • Retail displays mixing tree nuts without allergen tags create legal and safety issues

  • Placing packs in constant drafts from AC or fans pulls moisture out unevenly and causes case hardening

1
On opening: reseal pouch and press out air
2
Week 1: keep at room temp; check crunch weekly
3
Week 3: shift to airtight jar if not finished

One Cashew Apple Produces One Nut — Facts from Our Orchards

Real stories and science behind what we grow

🧺

Ancient Preservation

Archaeologists found sun‑dried raisins in storage jars over 2000 years old in northern India. Clay pots kept low humidity and stable temperature — methods similar to our modern food‑grade bins at 18°C.

Cashew Apple

The cashew apple (false fruit above the nut) is very tangy with vitamin C levels higher than oranges. In Goa and coastal Maharashtra it's fermented into feni, a local spirit, or pressed into fresh juice sold at village markets.

🌬️
Almond Pollination

Almond trees bloom for only 10–12 days in late February. Bees need calm mornings — strong wind can drop pollination success by 30–40%.

☀️
Nashik Sun Hours

Nashik gets 280–300 sunny days a year with peak UV 11 AM–3 PM. Monsoon drying needs shade nets to avoid case hardening.

🌾 Grading by Count

Cashew W240 = ~240 kernels per pound. W320 is smaller at 320/lb. Hotels use W240 for presentation; bakeries pick W320 for cost. Same quality, different sizes.

🧪 Nitrogen Flush

Nitrogen replaces oxygen in pouches, slowing rancidity by 8–10 weeks. No taste or chemicals — just extends crunch and oil stability.

📏 Drying Shrinkage

Fresh apricots lose 80–85% weight during sun‑drying. 5 kg ripe fruit yields ~750–850 g dried. This concentrates sugars and fiber naturally.
